Ingredients

  • 1 cup rava or semolina
  • ¼ cup curd
  • ½ tsp salt
  • ¾ cup water
  • 2 tsp oil
  • ½ onion, finely chopped
  • 1 carrot, finely chopped
  • ½ capsicum, finely chopped
  • 3 tbsp sweet corn
  • 5 beans, finely chopped
  • ½ tsp chilli flakes
  • ½ tsp salt
  • 2 tbsp finely chopped coriander
  • ½ tsp ENO or fruit salt
  • 2 tbsp water
  • oil for roasting

Instructions

  • Combine 1 cup rava, ¼ cup curd, ½ tsp salt, and ¾ cup water in a large bowl.
  • Mix well, cover, and let rest for 10 minutes.
  • In a pan, sauté ½ onion, 1 carrot, ½ capsicum, 3 tbsp sweet corn, 5 beans, ½ tsp chilli flakes, and ½ tsp salt.
  • Transfer the vegetable mixture, 2 tbsp. coriander, ½ tsp. ENO, and 2 tbsp. water into the Rava mixture.
  • Heat 3 tsp. oil and rava batter in a pan.
  • Cover, simmer for 3 minutes, flip over, and roast on medium heat.

  • 2 litres of milk
  • ½ cup basmati rice, soaked for 30 minutes

  • ½ cup condensed milk

  • ½ tsp cardamom powder
  • 2 tbsp chopped cashew

Instructions

  • Boil 2 litres of milk.
  • Remove the cream from the sides of the milk.
  • Soak ½ cup of basmati rice for 30 minutes.
  • Grind the rice to a coarse texture.
  • Add ground rice to the milk, mix well, and add a pinch of saffron.
  • Boil for 5 minutes or until well cooked.
  • Add ½ cup of condensed milk and cook until thickened.
  • Prepare caramelized sugar by stirring on a low flame until golden brown.
  • Pour the caramelized sugar over the kheer and cook for 2 minutes.
  • Add ½ tsp. cardamom powder and 2 tbsp. cashew; mix well.
  • Chill the kheer before serving.
  • Serve topped with pheni and nuts.
